Farina Pie



 Farine Pie is one of the traditional pies made and served at Christmas time in Bermuda. There are many versions of this recipe within each local family. It is quite filling and can be a meal in itself. Some locals prefer to eat it with chicken baked right into the pie or not. I actually like to enjoy the pie without chicken as the pie tends to take on the chicken flavour which is quite strong. Either way you choose to eat it you will quickly learn that it is a great compliment to your Christmas feast. You can eat it warmed up or fried in the frying pan with butter.
Ingredients:
  • 2 lbs of farina
  • 8 eggs
  • cinnamon
  • 1 1/2 cups of sugar
  • 1/2 lb of butter(melted)
Method:
Soak the farine overnight in water or condensed milk diluted with water.
Preheat oven to 325 degrees.
Mix farina, eggs, sugar, butter and cinnamon together. Next pour mixture into baking pan deep enough to hold the entire mixture in a hot oven for about 2 1/2 hours or until top is golden brown.
